We have an Ethiopian back on the offering list today with the launch of Hunkute
! This is a superbly processed and beautiful clean washed Ethiopian with gobs of sweetness and a vibrant, lively acidity. Head Roaster Taylor Gresham and I have been working for a couple of weeks to nail the profile on this coffee and we settled on one with a 12.5 minute total roast time and a 22% development ratio. The end temperature is just 393F, which makes it the lightest coffee we have on bar by a long shot. I think that it works spectacularly well for this coffee, though, as it has a lovely lavender note that vanishes completely above 400F. We went with the longer roast time (most of ours are 9-11 minutes) to give the coffee proper development and solubility. I highly recommend it through thick paper filter brew methods (Chemex, Kalita Wave) as they coax out the more delicate floral flavors in the coffee.
